Mango Salad

Fresh, cool and oh so summery. For a light snack or to serve with your favourite main, let this versatile salad surprise your taste buds!

Serves 4

What you need

  • 3 Large ripe Mangoes peeled and chopped
  • 1/2 cup 1/2-inch diced spring onion
  • 1/2 cup 1/2-inch diced red bell pepper
  • 3 tablespoon fresh lime juice
  • 3 tablespoon brown sugar
  • 1 tablespoon chopped fresh coriander (optional)

What to do

  1. Lightly stir together all ingredients in a medium bowl.
  2. Salad may be served immediately or covered and refrigerated for several hours.
  3. Serve alone, or as a festive accompaniment for barbecues.
