What you need
- 3 Large ripe Mangoes peeled and chopped
- 1/2 cup 1/2-inch diced spring onion
- 1/2 cup 1/2-inch diced red bell pepper
- 3 tablespoon fresh lime juice
- 3 tablespoon brown sugar
- 1 tablespoon chopped fresh coriander (optional)
What to do
- Lightly stir together all ingredients in a medium bowl.
- Salad may be served immediately or covered and refrigerated for several hours.
- Serve alone, or as a festive accompaniment for barbecues.
